Easy to please

Hey there,

How was your weekend (and your Monday for that matter)?  My Monday night was fabulous — why?  It included the RHONJ reunion and vino.   See, easy to please.

Actually the whole weekend was pretty darn good.  Thursday evening I made some ginger shortbread cookies with maple frosting and, well, they were sort of blah in my opinion (Zach’s too).  Then, oddly enough, they started to taste better after each passing day.  They are very reminscent of those sugar cookies with the huge layer of frosting you can get at the grocery store/Target.  I decided to hang on to the recipe and play around with it.

My mommy friends tested them on our Friday meet up and enjoyed them though.  We met up at a cute park in Los Altos and watched the babies crawl in the grass and throw crackers around.  And we may have “snuck” some wine in as well — hey there were no signs telling us *not* too.

Saturday I hit up Spin class despite the fac that my lower back  was and is screaming at me (I blame the guy below).

But Saturday night was truly fab.  We had a date night with some friends we haven’t seen in quite some time and were able to indulge in several glass of vino, cheeses, dinner, and froyo at the end.  We dined at Gravity in Palo Alto followed by Fraiche.  A good time indeed.  And I was able to wear my new Frye boots.  More simple pleasures.

Speaking of old friends, we also had a lovely coffee date on Sunday morning with our LA friends who were in town for a college reunion.  It’s making me desparately want to take a trip down south and visit all of them!

Oh and my new green jeans?  Love them.  Total random purchase on Saturday, but they were a good deal and I’m pretty pleased with them.

Given all that and the start of some cooler weather, I’m quite pleased :D

Tell me how you’re easy to please.  Other things for me include: pedis, pumpkin spice lattes, smelling a seasonal candle, going for a walk with bean and noodle, cuddling with the cats, dinner out….

Pumpkin is the name of the game–> sweet swap

Hi there!  I’ve been MIA for the last few days due to awesome family and friends time for my baby shower that was held yesterday.  I will definitely recap soon! 

In the meantime, I wanted to highlight what I got from Amy and Jess’s blogger sweet swap Open-mouthed smile  You may recall that I made some pretty fabulous Dark Chocolate Pumpkin Cookies for my recipient last week Winking smile

My pairing was with Elizabeth at Random Stupidness.  She definitely was reading my mind and served me up some delicious pumpkin cookies as well – pumpkin white chocolate chip cookies!!!

The recipe is pretty similar to the one I used, but included instant vanilla pudding.  I am convinced that is what makes these so super moist.  And I also tasted a bit more cloves in hers than mine.  DE-LISH!

Luckily I’ve had plenty of houseguests to help eat these bits of yumminess Smile with tongue out

Those wild Friday nights

I’m old.

More than anything I just wanted to watch my DVRed shows…hello Jersey Shore and Real Housewives of Beverly Hills.  i think I may have actually felt a bit of sympathy for Camille the last episode.  But then that went away ;)

Though I was not at all in the mood to cook, I knew I’d feel better if I ate something healthy.  Prowling around the fridge and pantry lead me to these items:

Household staples

I cut of the tofu and let it marinate in TJ’s low-sodium soy sauce and crushed lemon pepper for about an hour and a half before cooking.  I sautéed all ingredients in a large non-stick skillet for about 30 minutes on medium-low starting with the onions and celery and finally adding the broccoli slaw.  Top with some Siracha and you have dinner!

I have to say these were pretty good.  I under cooked them slightly which was a bummer, but at 110 calories for pumpkin deliciousness, you really can’t go wrong. 

My Friday evening may have also been accompanied by 2 glasses of Pinot Noir :)

And wouldn’t you know I’m back at work, not enjoying the 60 deg sunny day.  In the words of Snooki ”Waaaahhhhh”!
