Some damn good eats

Somehow, I’ve managed to talk about everything but food this week (toilets, shoes, and push presents).  Today I bring you my awesome eats of the week:

It all started with muffins I won a bid for at Carrots’n'Cake’s bake sale.  Chocolate chip oat muffins and (my fave) cranberry apple banana muffins.  Typically I’m pretty good around homebaked goods, but I, err, sort of went to town on them, eating two right off the bat.  I had to ration myself for the next few days.  I sort of have a thing for bread pudding, so I took a delightfully perfect muffin, heated it up, poured vanilla soy milk on top to make this:

Yep, bread muffin pudding. So freakin’ good!  I recreated it one more time because it was just too good.  I really  need to do this to all future muffins.

I also had my first foray into the world of Lemon Chobani.  And…It.Is.Good.  It’s the first “new” flavor that I think has really stepped up the traditional blueberry and vanilla.  It tastes like lemon cheesecake and it’s divine.

This has been a beast to find.  My grocery stores have yet to stock them, but good ol’ Tarjay pulled through.  I’m definitely going to load up next time around.

And while we’re at it, then next time I go Trader Joe’s, I’m getting more of this:

Cut up kale in a bag for $2?  yes please!  Score.

And then make this

For dinner on Sunday night, my friend Kelley was in charge of the kale, for which she sauteed in a skillet along with some swiss chard, plenty of garlic, red onions, and some red peppa.  Top with roasted pepitas and you have one heck of a side dish.

I was in charge of potatoes and followed the tried and true Lipton soup recipe — ever heard of it?  All you need are some potatoes, a Lipton onion soup packet, and some vegetable oil (I added additional red onions because onions rock).  Bake for 35 minutes and you have super flavorful potatoes.

The hubby was in charge of the chicky.  We used my fave BBQ sauce — courtesy of my awesome friend Natalie in KC — and grilled up tenders.  This is the first time in a long time chicky has tasted good.  I actually wanted more.

And tomorrow more good eats will ensue when I finally have a chance to try Seasons 52.  I’ve been scanning the menu already drooling at my prospects.
