It seems that a lot of you can sympathize with my travel woes I experience last weekend. Let’s all just get a private jet shall we?
Last week I wrote about how to eat well on work travel. 99% of the time, I do well with these tips, last week included. But I have to disclose something. I ate a donut. Not that it is that big of deal, but I wanted to share that I give in to cravings too. I was about to eat the yogurt I had grabbed from the hotel when a coworker offered donuts he just picked up. If there hadn’t been a glazed chocolate cake donut, I would have said no, but there was. So I ate it. And I liked it. Instead of fretting that I succumbed to different eats, I made sure to lighten my lunch with more greens, no carbs, and had my apple and yogurt as an afternoon snack. No harm no foul, right?
The last few months, I’ve been on a real pizza kick. I’m pretty sure I could eat it daily. No lie. I think since Mexi food (fried tortilla chips) has been making sick (damn you peanut oil), I have replaced that love with pizza.
And it doesn’t seem to matter if it is a Kashi frozen, or a Patxi’s Deep Dish, I want it and eat it all the same. But quite possibly my favorite way to eat pizza is at home with tons of veggies!
Tuesday night I started with these ingredients:
Toppings include Trader Joe’s Spicy Italian chicken sausage, green pepper, red onion, jalapeno slices, and green olives. <– if you haven’t tried green olives on pizza you definitely should! Instead of a “pizza sauce” I opted for a simple tomato sauce that I jazzed up with garlic and oregano and tons of black/red peppa.
And because the hubby is sick of TJ’s whole wheat dough (I know, blasphemy), I opted for a pre-made crust:
