“How can something so gross turn into something so good”

No, that’s not what the hubby said yesterday morning even though I did feel like I got hit by the ugly stick.  Ever have one of those days?  I blame it on having to arrive at work at 645a to prepare for my 7a meeting and 10 hour day.  This girl needs her beauty sleep…and a lot of it!

But in reality, the title is actually what the hubby said when I turned some pretty nasty looking bananas into these:

Banana butterscotch muffins

Recently I was reading Becca at I heart eggs and she shared a recipe from her grandmother for banana bread and it was just too good to pass up.  Besides, what else do you do with nasty looking bananas?

3 is a normal serving right?

The recipe is really quite simple and I followed in nearly to a T, well, except for I made muffins.  And added butterscotch chips ;)

Bananas do a body good

Becca’s Nanny’s Banana Bread / Muffins (only slightly adapted by Shanna)

  • In large bowl, mix 1 cup white sugar, 1/2 cup shortening (I used Crisco butter sticks)
  • Add in 2 large eggs and 1/2 cup cold water
  • Mash 3 bananas in small bowl and add to above bowl
  • In separate bowl combine the following dry ingredients: 1 tsp baking powder, 1 tsp baking soda, 1 tsp salt, 2 1/2 cups flour, 1 tsp cinnamon (cinn is my add-in)
  • Slowly mix flour mixture into ‘wet ingredients’
  • Mix in 1 cup of butterscotch chips (my add-in)
  • Divide batter into 18 muffin lined muffin tins
  • Bake at 350deg for 24 min

Plenty to share

What you get is a pretty tasty slightly sweet banana muffin.  Quite good I must say.  I also have to note that I can resist nearly every single baked item I create, but for some reason, I really wanted to devour these.  Dare I say I may have eaten 4 or 5 of them!

  2. You already have my best recipe ahahah

Glad you enjoyed them! I think its the smell of them baking tht almost did ME in to indulge in them. I never have problems resisting but the smell of baking muffins was tempting!

  3. Wow 7am meetings? Yuck. Moving to a site that has no manuf has one benefit: no meetings before 9. Hard to get a hold of anyone before 9 because they are most likely stuck in DC traffic.
These muffins look delish! I hate seeing gross spoiled bananas being thrown away, the grosser and mushier they are the sweeter and the better muffins will be! This makes me want to make muffins, it’s been a while!

  4. I love chocolate chip banana bread…I use this recipe…http://myinnershakti.com/recipes-2/whole-wheat-chocolate-chip-banana-bread/

    Your muffins look delicious!

  5. Uhh yum! I’ve been snacking on muffins all week. These look delish, plus anything with butterscotch chips is bound to be heavenly. I think my favorite banana recipe is my mom’s for banana fritters, which reminds me that I need to get that from her!

  6. I’ve been feeling blah all week. I blame the hair. I’m getting it cut tonight- but honestly, it’s been something that should have happened 2 weeks ago…

  7. You always make me laugh, Shanna. I love banana bread/muffins so dearly. Will absolutely have to brown some naners for this!!

  8. I can’t stand bananas but I love banana bread and muffins. How’s that for a play on turning something gross into something good? :)

  9. When I’m having a blah day, I either buy stuff online or have an amazing cardio workout. Both put me in the best mood ever!!!

  10. I always feel like our bananas are toold old, but then magic happens. I love rotting foods, haha.

  11. Ha I almost never eat normal nanners anymore. I wait until they are disgusting and brown and make delicious treats such as nannerbread and nannercakes. Those look so good!

  12. You should move to the east coast so you won’t have as many early meetings! (and so I can visit you more) :)

  13. Butterscotch and banana are SO good together. This recipe sounds amazing.

  15. Wow these muffins look amazing! I’m just patiently waiting for my nanners to start getting dark on me :D

  16. Now when I see butterscotch chips I think of the oatmeal cookies you sent me. So good!

So can this recipe compare? lol! It’s different because one was cookies and this is a muffin form.

I wait for bananss to turn really ugly, like a day away from the trash can ugly, then I bake with them and that’s the trick to making them so sweet that you barely need sugar in the recipe. Well, for my taste anyways.

  17. Oh girl, 10 hour days?? That’s crazy! Hope you get some rest soon! The muffins look delish! My favorite banana recipe: http://thisitalianfamily.wordpress.com/recipe-book/chocolate-chip-banana-oat-cookies/ <– love it! Made these for a group of girls that came over the the weekend and they flipped for them! :)

  18. Thos sound good, I love butterscotch and feel like I don’t eat it enough

  19. Banana bread with chocolate chunks: http://districtchocoholic.blogspot.com/2010/11/thanks-for-helping-me-change-flat-last.html

Or banana soft serve (I trust you know that one) with Scharffen Berger cocoa powder mixed in. I think I will go make some now.

  20. Love Becca & her baked good recipes! I agree that its crazy that gross brown bananas can make something so delicious!

  21. I have been DYING to make Banana Bread lately! But my schedule is just wearing me out.

    Must make these…although I know I won’t just stop at 4 or 5…oh gosh, maybe I shouldn’t…

  22. I love butterscotch! So underrated!

  23. Looks good !!! Yum I’m hungry!

I like to take a hot bath on a blah day or paint my nails : )
