Thanksgiving may have been two weeks ago, but that doesn’t mean I got my stuffing fix. I don’t understand why we limit ourselves to this underrated side-dish to just 1 day out of the year.
I came up with a healthy recipe with just a few simple ingredients:
Chop up 1 apple (I used Braeburn), 2 small yellow onions and 5-6 stalks of celery. Throw chopped onions and celery in saute pan on medium heat with EVOO. Add in about 1 tsp each of the above spices. Let cook for about 10 minutes stirring often. Finally add in your chopped and saute for another 5 minutes or so. Add lots of ground peppa if you desire
Next scoop about 1/2 cup of your bread crumbs into a small casserole dish. Add 1/2 cup of your warm veggie mixture. Pour 1/4 cup chicken broth (or veggie broth — I used TJ’s chicken stock that you add water to). Keep layering about 4 times. Lightly fluff with a fork when done.
Now cover your casserole dish with some tinfoil and bake for 25 minutes at 400deg.
Remove tinfoil and continue baking another 10-15 minutes until top is golden brown.
Once it is out of the oven, allow to cool for about 5 minutes before you serve.
Delish. Thanksgiving at your fingertips =)
BTW…other possible add-ins: raisins, pecans, pine nuts, etc
On another note, I’m in a complete funk and really wish work could take a back seat so I can start to enjoy the holidays. I think I shall live with all of you that are entrenched in Christmas joy
