What do you think of my oh-so-clever title huh? You can laugh at me, it’s okay. My brain is running on fumes right now after the big presenation on Tuesday. In fact, I sent out a email invite to our Executive Advisors for a celebratory dinner and not only did I not adjust for being on Mountain time (versus Pacific as my email is set to), I also picked the wrong day. No wonder they didn’t show up Tuesday night…whoops! 8)
Would you believe I’ve never made banana bread? Seems kind of odd being that it’s nearly my namesake..haha. I have made other breads, just not banana, so when Cooking Light’s October 2010 featured “The Perfect Banana Bread” I knew I had to make it.
I’ve taken their PB BB and adapted it (because that’s how I roll!) and what do you end up with?
Peanut Butter Chocolate Chip Banana Bread (or PBCCBB
)
Here’s what you need:
- 1.5 cups mashed ripe banana (this was nearly 6 small bananas for me)
- 1/3 cup plain fat free yogurt (I used vanilla fat free)
- 1/3 cup creamy PB (I used Omega-3 JIF creamy)
- 3 tbsp butter (I used Blue Bonnet)
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1.5 cups all-purpose flour
- 1/4 cup ground flaxseed (I used Trader Joe’s blueberry flaxseed)
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/8 tsp ground allspice (I used pumpkin pie spice)
- 1 cup chocolate chips (not in CL’s recipe)
Here’s how to make it:
- Preheat oven to 350 deg
- Spray mini-loaf pans (or large loaf pan) with PAM
- In a large bowl combine banana, yogurt, PB, butter, eggs. Hand mix.
- Next slowly add in both sugars into same bowl until blended
- In a separate smaller bowl, combine all the remaining ingredients (minus the chocolate chips) and stir together until blended
- Slowly add flour mixture to banana mixture and continuously stir
- Stir in chocolate chips
- Pour batter evenly into 4 loaf tins
- Bake for approximately 50-55 minutes (note, if you are baking in a 9×5, this will take longer). Bread is done when toothpick comes out clean from the center
- Remove, eat, love.
Now how ’bout some pictures?
These loaves were soooo enormously tasty. I loved them. Simply loved them. The PB adds a subtle flavor, but truly the chocolate chips are what makes this bread
We ate one that evening, gave one to the bestie, and two remained before I went on work travel.
I returned from Denver yesterday stoked to lay into a warm piece slathered with a bit of butta, and guess what? No bread
Hubby must have ate it all. Dangit!
What do you add in to your BB?
Do you ever make a treat, get excited to eat it, only to find it’s gone?

This looks so good!!! I’ve been wanting to make a banana-chocolate bread lately and this recipe seems perfect!!
This was so easy and so tasty Liz — go for it!
I really love the mini loaf pans- I think they’d be perfect for me since I cook for one… keep one fresh and pop the rest in the freezer!
I never want to use full loaf pans again..these are great for portion sizing!
yummmmmmmm…. jess just made some choco chip banana bread a couple nights ago, i’ve been gorging on it at work for the past couple days. soooo good. and, yeah- the choco chips make it amazing!
Kurt’s first comment!
Here here to chocolate chips!
Yes-I have made so many cookies before and my swim team devours them. I make sure to save a few for me at my house first now. Although-with the man stealing them you may have to have a secret stash!
I usually will hide things from the hubby on a bottom shelf where he won’t look
Why have I never thought to put peanut butter in banana bread? Genius.
It seems so simple doesn’t it? And what doesn’t PB taste good in?
I LOVE that loaf pan!! Such a cool idea.
When I lived at my parents house, I used to have to put my name on everything, or hide it in my room to keep my brother from eating it. I would always be so excited to eat something delicious that I made, then come home to find he’d eaten every last bite. So disappointing!
Oh yeah..good idea..I should start putting my name on things!
hell yeah! I loves me some banana bread. It’s made from rainbows and kitten kisses and unicorn wonders.
Well if it’s made from unicorns…
three words: OH MY YUM!
You got it!
Love the title! And the bread looks great. I love mini things.
All these minis could make me a maxi!
This bread looks and I’m sure IS delicious which is why you have to bake a 4 pack.
That pan is so cool!! And I happen to think your post title is quite witty
I get Cooking Light but didn’t notice the banana bread recipe. Yours is much more eye-catching.
Hope you enjoyed Denver and managed to stay warm!
girl this looks AWEEEEESOME! I agree w. everyone.. AWESOME PAN! I want it!
Banana bread and chocolate…. my mouth just started watering thinking about that amazing combination.
Here’s what you do to avoid this problem in the future – freeze it and hide it in the back of the freezer. Your hubby will never look for it. I guarantee it!
This recipe is RIDICULOUS! Omg that looks so good. I dont know why I never thought of putting peanut butter in banana bread. You are a genius girl! =)
OMG, where did you get that 4x loaf pan!?!?
That recipe looks like a winner, I might add.
Last time I made cranberry muffins my dogs stole them from the counter when I turned my back.
If not the dogs, my brothers would have shortly.
I love banana bread – I put chocolate chips in it but have never tried it with PB.
I am a HUGE FAN of Banana Bread and i was making a killer one that had vega protein in it, but was eating it daily which was not so good…..
Love this!
xxoo
ha! love the title.
