Uncle Sam Brownie Cookies

Remember how Uncle Sam sent me some cereal?  Well I’ve been having some fun with it this past week.  As I mentioned before, it’s not that kind of cereal you stick your paw hand in and just gorge yourself until you feel like a pot-bellied-pig, but more of a wow-this-is-good-for-me-and-filling cereal!  I’ve been mixing it with my Chobani Greek Yogurts and it’s heaven — just the right amount of crunch.  I also balled up half a cantaloupe, paired it with 1/2 cup fat-free cottage cheese, and 1/4 cup Uncle Sam.  Great lunch/snack.  

But my most adventurous creation were Uncle Sam Brownie Cookies!  :)   I perused the internet for a multitude of recipes just so I could get an idea of what all ingredients I might need.  This is what I settled on:  

Can't go wrong with these ingredients!

 

Alrighty, so wanna know what to do?  Take 1 bowl –yep just 1 big bowl, and  

  • Add 1 box brownie mix your choice (and by box, I’d say 18-20 ounces)
  • Add 2 heaping cups of Uncle Sam cereal
  • 1/4 cup cinnamon (because cinn makes everything better)
  • 1/4 cup chocolate chips (regular, mini, butterscotch, dark, peanut butter — your choice!  I used regular-sized chocolate)
  • 1/3 cup water
  • 2 tsp vanilla
  • 1 tbsp vegetable oil
  • 1 egg

Stir it all up.  The consistency is surprisingly moist despite the deficit of liquids.

Heat your oven to 350 deg and lightly spray your cookie sheets with PAM (or similar).  

Use your teaspoon measure to dole out rounded teaspoons on the cookie sheet (approx 2″ apart).  Bake for about 11 minutes.  Remove and let cool completely.

This yielded about 36 cookies.  

I loved the crunchy texture of these cookies and how heavenly and without any butter or a lot of oil!  My bestie said they tasted like soft cocoa-puffs in your mouth.  Her hubby said: “Thank you for the cookies. I don’t want to know what is in them – they are soooo good.”  I’d say that’s a pretty good compliment.

30 Days of Insight: Day 18 – A picture that makes you feel. Well whenever I see food pictures, they make me feel hungry ;)   But I gather that’s rather obvious.  So I give you a photo taken from the SPCA.  You see, when I watch commercials advertising homeless animals, I cry.  And not just a little: a LOT.  It literally breaks my heart to pieces and my sadness reaches levels I cannot explain.  In fact, I have such a soft spot for animals-in-need, that my husband and I asked our wedding guests to donate to the Humane Society in lieu of gifts.

  1. I had never heard of putting cereal into cookies until someone served them a few years ago. I couldn’t figure out what it was that was making the cookies so good! ha ha…

  2. Yep, those cookies did not last long at my house. Less than 24 hours actually. :)

    The animal shelter commercials make me cry too. And then I go hug my dogs and they look at me like I’m a weirdo.

  8. Those commercials for abused animals make me cry too. It is so sad.

    A picture that makes me feel? Most wedding pics — when you can look at the bride/groom’s face and see that they feel like the luckiest person in the world. I cry at every wedding too! Even if I don’t really know anyone!

    I have never made brownies or cookies with cereal. I have made brownie mix + can of mashed/drained black beans — that actually works pretty well. That is an old weight watchers recipe :)

    Oh gosh I cry during those commercials too! I used to work at a vet, and seriously could not handle seeing all the stray animals get brought in. Axell is from a rescue! She was starved as a baby, and a lady saved her and fostered her until she found her a home- ME! (:

  12. Haha, how is it that almost any cereal I try turns into the pot-bellied-pig variety? Every time I grab a box of Kashi I literally declare this to be the box that lasts longer than three days…rarely happens :/

    That’s so awesome that you’re letting people give money to the animal shelter instead of giving presents! I feel like presents are almost part of the whole wedding “package” so the fact that you’re doing out of this for your love of animals is amazing! That’s so sweet and so awesome of you!

  17. My doggie is a rescue pup from the SPCA! I had them as a client a few years ago, and I can’t even begin to tell you how hard it was to not take every single little guy home! What a great idea for your wedding guests to donate to such a great cause!

    Those cookies look delish! I wonder if they would be anything like the choco rice crispy treats from childhood… guess there’s one way to find out! Thanks for the recipe!

  18. You and me both sister! I have to change the channel when those sad commercials come on. I’m also not allowed to “just look” at the pet store anymore either. The Humane Society brings in all these cats and kittens and I end up crying because I want to rescue them all.
