Cabbage for rice … AND a Giveaway!

I know many of you lovely food bloggers are galavanting around Chicago at the Healthy Life Summit, but hopefully you’re makin’ time to read some blogs ;)

When cooking dinner, time is of the essence IMO.  Unless I have a glass of wine in hand and am playing with a new recipe, I usually want my dinner to be ready pretty darn fast.  So my go-to meals are stir-fry.  Usually I can find things in the fridge, freezer, and pantry to offer up so there are no random ingredients I need to rush out to buy.

Start off with a large sautee pan.  Add 2tbsp EVOO and heat on low/med.  Add your diced onions (any onions will do), peppers (if they’re on hand), and any other fresh veggie you desire.  Let these veggies brown up for about 5 minutes.  Then add a bag of cabbage slaw — yup, no rice here!  Cabbbage is an excellent alternative as a filler to bulk up your meal.  At this point you made need to add a bit more EVOO.  Add some flava with a low-sodium soy sauce (Trader Joe’s) and/or a Teriyaki sauce.  Or if you’re like me, mix ‘em.  And don’t forget the Siracha for some HEAT!  In this stirfry I also added some steamed brocolli to the mix. I love brocolli in Asian dishes.

The real reason I want to make a stirfry is because I need something to accompany these guys:

If you have not had them, go out and get them…now!  They are quite tasty and 7 of them clock in at 210 calories.  Not bad, eh?  The potstickers can be cooked alongside your stir-fry and take approx 6-8 minutes of total cooking time.

Before you know it, you have an entire, healthy, low-cal meal bursting with flava, in under 20 minutes!

Yesterday you may have read my review of Uncle Sam cereal. Wellll, now you can get your own box.  Seriously these people know how to market and market well. Offering cereal to bloggies is a great way to get the brand around and as we’re all health conscious, we can appreciate this nutrient-loaded cereal.

30 Days of Insight: Day 13- A memory that never fails to make you laugh.

This isn’t a memory per se, but it’s a joke I was told by my bestie.  And, in fact, it was her husband who told it to her..but wait for it…he told it to her for the first time in front of her very conservative Grandma.  Bestie did not find it funny.  Re-telling of the story: hilarious. 

And in case your wondering, this joke does not translate well in Italian ;)

“So a pirate walks into a bar with a steering wheel in his pants.  And the bartender goes “Um, did you know you had a steering wheel in your pants?” And the pirate says, “Yarrr!!  It’s drivin’ me nuts!”"

  1. Ahahahaha!!! I don’t know what’s funnier… remembering when Ilya told that to my Grandma (and uncle) upon their first meeting… or trying to re-tell the joke to a Frenchman and a Swiss in Italy. Aparently pirates and pirate jokes are not as big in Europe. ;-P

    I’m in love with milk and cereal, but lately I’ve been using cereal to coat my proteins (faux fried style).

    I liked the joke, but this one…A couple of hunters are out in the woods when one of them falls to the ground. He doesn’t seem to be breathing; his eyes are rolled back in his head. The other guy whips out his cell phone and calls the 911. He struggle for breaths to the operator: “My friend is dead! What can I do?” The operator, in calm, soothing voice, says: “Just take it easy. I can help. First, let’s make sure he’s dead.”There is a silence, and then a shot is heard…The guy’s voice comes back on the line. He says: “Okay, now what?” – is timeless!

  15. YAY for giveaways. I love love love cereal. I use it on everything… milk, yogurt, frozen yogurt/ice cream, pudding, cottage cheese, salads, etc. Sounds weird, but it’s so good

  18. Oh my gosh, cabbage is a great idea in place of rice! I totally never thought of that, but I’m going to try it next time! Since I’m a vegetarian, I’ve been cooking up the TJ Cucumber Wontons with my stir-fry and I love them!

  19. I was not in Chicago but I was out of town the last few days so I’m catching up on blogs now :)

    I have been obsessed with cabbage stir fry lately too. I love the crunchy texture. I serve mine over fried tofu cooked in TJ’s stir fry marinade. Such easy and quick dinner. Will probably write about it this week.

    I haven’t tried Uncle Sam cereal. I plan on using it as a crunchy topping on top of my yogurt and fruit parfait. It’s my go to snack at work.
