Okay so last night I made my first ever Overnight Oats. I was 100% wary and about 75% dreading what I’d find in the morning. You see, I like my oats H-O-T. The hotter the better…they fill me up, make me happy, warm my tummy and my soul. So I may be exaggerating just a wee little bit, but I want to make my point
1/2 cups old-fashioned oats
1/2 cup Silk almond milk
1 tbsp TJ’s pumpkin butter
1 tbsp raisins
Heavy sprinkling of cinnamon
And this is what they looked liked — no stirring until the AM.
At 9a at work, I very hesitantly retrieved my oats from the shared fridge and stirred them up. The scents of pumpkin and cinnamon wafted to my nose and I did my best not to stuff my face in my tupperware.
Then I took a bite . . .
And . . .
I LOVE these OO (Overnight Oats)!
Epic WIN! I was so afraid they wouldn’t be sweet enough or would just be really lack luster, but I was wrong. Yep, I said it. I’ve been schooled by the all the bloggers who love OO, while I skeptically scoffed at their creations.
Am I a convert? Yes in the sense that I will absolutely make these again. Hot oats may make the more frequent appearance, however.
But thank you blog world for showing me the errors of my way. I am now indebted to you.
You know what else makes me happy? Receiving packages! Yesterday when I arrived home, my purse had arrived! I’ll let you in on a little secret: Shop Suey Boutique. Have you heard of it? It’s often featured in People, Us Weekly, etc as the “Steal” when compared to celebrities’ purchases. I’ve been snagging these great finds for a few years now and have never been disappointed. If you’re like me, you like to have options with your purses. I rotate my 20 or so purses throughout the year and while I dearly love my Burberry and Coach purses, I get more than a little elated at spending less than $75 for a great, trendy, unique purse. I get updates from Shop Suey and last week they sent me their New Arrivals list — well I promptly told my bestie Andrea and by that PM, we had each thrown down the plastic for some new summer bags.

Hi Erika! If you are a pumpkin fan, add a dollop of Trader Joe’s pumpkin butter the night before. Heaven!

ShopSuey makes the purses..they sort of ‘copy’ what’s in style by the big designers and make them for cheap =)
