“Ohhh, oh, ohhh, I wish it were Sunday…ohhh, oh, ohhh, cuz that’s my funday!” Ha! How do you not get that song stuck in your head? Unfortunately for me, Sundays are never that great because I’m in a mind warp on the week ahead. Does that happen to you?
The day didn’t have any exciting food eats, but I’ll share them with you anyway
Breakfast: Blueberry multi-grain oats with 1 tbsp all natural PB (not as the burst of flavor I was hoping for)
Lunch: Pumpkin spice cookie
and Green Monster which included 3/4 cup almond milk, 1/2 cup packed frozen spinach, 1 small ripe banana, <1/4 cup frozen blueberries, some agua (tasty but runny!)
Dinner: Friday’s leftover pizza…mmmm…I think I could have done without the dough and just licked the pesto and roasted veggies right off!
And the workout was a 45 minute fast walk with the dog, 30 minutes on the elliptical, and 15 minutes of ab work. My workouts this weekend were very “meh.”
Back to Monday…my Mondays speed right along thanks to a lot of meetings and catch-up from all those crazies that like to work on the weekend
I started with my TJs Costa Rican coffee with cinnamon and a dash of vanilla creamer. Then on to my apple-cinn oatmeal with half of a banana finely sliced in the oats. Gotta say, I missed my raisins in my oatmeal. The banana did nothing for it. Sigh.
Lunch was another super size salad topped with leftover roasted pizza veggies and some feta (okay lots of feta
) About 1 tbsp balsamic topped ‘er off and then shake-shake and you have healthy deliciousness.
Afternoon snack was another pumpkin spice cookie (doughy heaven if you will) along with a nectarine. OMG, I love nectarines. They indicate the summer is here
Dinner was somewhat ho-hum but tasty. I toasted a Thomasville english muffin and slathered on some of Friday’s remaining pesto and then topped with some low fat mozzarella cheese. I also had some (undocumented) carrots. Have I mentioned that I hate food going to waste so I like to find ways to incorporate it into new meals as soon as possible.
Well Zach leaves for the World Cup in S. Africa in just 2 days and then it will be 13 days of being a single “mom” to all the pets. Sadness!
